It is summertime and the grill at my house is fired up!
Summertime is here and all over the country grills are being lit and the side dishes are being prepared. I don’t know about you but there are times when the side dishes take as long to prepare than the actual grilling of the meat. I mean it can take an hour to make homemade potato salad. I also noticed another thing about summer cookouts, is it me or it is the same side dish over and over again? I would like something quick and easy and most importantly healthy and fresh. Imagine my excitement when Mann’s Fresh Vegetables called me and asked could I develop a great grilling recipe around their Nourish Bowls.
My response: “Uh Yeah!” How did they know my current dilemma?
Mann’s Nourish Bowls are the answer. If you are looking for a healthy meal option these abundant bowls of fresh vegetables like kale, chick peas, butternut squash and a sauce packet are the answer. One flavor even includes a delicious whole grain brown rice and another has bacon. Vegetable lovers you have a new muse. The bowl alone can be a meal for one but it is also nice as a side dish when paired with the perfect protein and I have the perfect partner for my Bacon Maple Brussels Nourish Bowl, sweet jerk chicken legs.
I love Jerk Chicken and so does my little one but my husband and daughter avoid it because it is too spicy for their palates. So, I went into my lab or shall I say kitchen opened up my spice cabinet and decided that I was going to create a jerk marinade that the whole family could enjoy and the best part outside of creating a fresh spice blend with no added preservatives was everything that I needed to create this taste of the islands was already in my cabinet. I was going to give my summer a flavor explosion and thanks to the easy preparation of Mann’s Nourish Bowls a barbecue wasn’t only for the weekends. Marinating my meat overnight was the key to maximum flavor.

If I were you I would make a second batch of the dry jerk spices to use at the next barbecue. You can thank me later. I did!
I was feeling festive so I prepared a few non-alcoholic tropical drinks while I prepared our taste of the Caribbean. Mango and pineapples are plentiful this time of year. Take a sip of juice and back to mixing, this is going to taste so good.
This recipe calls for (2) Mann's Bacon Maple Nourish Bowls and I used the entire sauce packet from one of them in the marinade; the sweetness from the maple sauce takes this jerk seasoning to another level, Yah Mon! No worries the other sauce packet plus the grilled pineapple chunks will make the perfect side.

Assembling the Mann's Bacon Maple Nourish Bowl was simple and was done in minutes not hours!!! Yay!! I prepared it while my chicken legs were resting.
Preparing these delicious bowls took only a few minutes in the microwave which made them the perfect addition to my summer meal menu. I can honestly say I was really stuck in a rut with sides that were healthy and barbecue friendly these bowls are perfect and with five different bowls to choose from everyone will find a Mann's Nourish Bowl that will be their new favorite. We did!
If you don’t want to fire up the grill that’s alright, all you need to do is heat your oven instead to 400degrees and bake for 25minutes or until the internal temperature is 165degrees. Place your pineapple rings on a sheet pan sprayed with non-stick cooking spray bake for 10 minutes and you still have a winner, winner chicken dinner.
Sweet Jerk Chicken Legs
2 tablespoons onion powder
1 tablespoon dried chives
1 tablespoon dried thyme
1 tablespoon salt
4 tablespoons dark brown sugar
1 teaspoons lemon pepper
1/4 teaspoons cayenne pepper
2 teaspoons garlic powder
1 tablespoon ground allspice
1⁄2 teaspoon grated nutmeg
1⁄2 teaspoon ground cinnamon
2 tablespoons dried parsley
1/4 cup pineapple juice
1/3 cup olive oil
6-8 chicken legs
6-8 canned pineapple rings
2 Mann’s Maple Bacon Brussels Nourish Bowls
In a large bowl combine all dry ingredients and pineapple juice along with one package of the Mann’s Bacon Maple Brussels Nourish Bowl sauce. Once combined add oil and stir.
Dip pineapple rings in marinade then set aside in another container. Add chicken to marinade, cover and refrigerate for one hour.
Oil your grill grates and preheat your grill to 400degrees. Once grill reaches the right temperature remove chicken from marinade and place on grill and cook on each side for 10-12 minutes. Legs are done when internal temperature reaches 165degrees.
Once chicken is finished, grill marinade soaked pineapples for 5 min on each side when done slice into chunks. While chicken is resting take your Mann’s Maple Bacon Brussels Nourish Bowls and combine both bowls into one. Stir in bacon and remaining sauce packet and cook according to package directions.
When vegetables are done stir in pineapple chunks. Serve with jerk chicken legs.Silver Spoon: The longer you let the chicken marinade the better. Overnight is best. Marinade pineapple rings in fridge until you are ready to cook.
